Sandwich #3 Beet the Cheese Sandwich Slice 1/2 roasted red beet. Spread 2-3 tablespoons goat cheese over bread. Top with beets, several springs of watercress and sliced sardines.
Sandwich #4 Italian Dream Sandwich Chop a few marinated sun-dried tomatoes; mix with several fresh basil leaves. Cream 1/4 cup cashews with a little nut milk, season with salt, pepper and onion powder. Spread over bread slices. Top with tomatoes and basil and sandwich it all together. Drizzle or brush bread with garlic olive oil.
